Here is something you can make in less than hour if you really don’t have the time to spend in the kitchen.
I start with cleaned chicken thighs and lay it in hot oil with diced onions and let cook and brown.
Then I blend some tomatoes, (here, I only show one but I ended up using 2, to have more sauce) garlic, onion, and pepper. I then add mixture to browned chicken
Here, I chopped some green bell peppers, tomatoes and more onions to add to sauce and chicken for additional flavor.
Then I added some spices. My spices of choice were: Italian dry seasoning, rosemary leaves, ginger, adobe and some salt. (sorry I don’t have pictured spices)
I cover it and let it simmer for a about 10 minutes or so, then viola!
I obviously had mine with white rice, but feel free to choose a side of your choice. If you try this, do let me know how it turned out for you.

In the wake of eating healthy, my parents have decided to do away with canned tomato sauce. But they are still eating other things…but I digress! Lol.
I typically do the cooking so I wasn’t very open to this idea because I thought it was going to be tedious and make my food taste different. But I remembered back home in Ghana when I was growing up No one ever used tomato sauce they just used this recipe I’m going to share below. It is really fast and easy and the food I cooked with the sauce came out amazing!
- Wash and cut up tomatoes into a pan
- Add you seasoning. Some ppl like to do it after but I want it to be infused in the sauce so I do it prior
- Steam the tomatoes. Meaning, let the vapor cook the food…so do not add water
- After the tomatoes get super soft and begin forming a sauce on its own, throw it in a blender
- Hit the purée button on your blender and in a few seconds, your tomato sauce is ready.
So easy right?!

Begin by seasoning the chicken wings with spices of choice then coat it with flour and get ready to fry it.Chicken wings should look like this after deep frying it.Now its time to make the hot sauce. You will need pepper, garlic, butter, onions and your favorite hot sauce. Use ingredients according to how you like your flavors. for example, use more garlic for an intense garlic flavor, or more or less pepper depending on how well you can stomach spicy foods.In a pot, I mix my butter, chopped up peppers, onions and garlic and let it simmer for a while.I then put my hot sauce to the mixture.Pour the sauce all over the chicken. toss, toss, toss and toss some more till all the chicken wings are coated with the sauce.Then spread chicken in a baking pan and put the chicken in the oven. Do not cover it up, but bake it at about 400 degrees for 5-10 minutes.This is what your wings should like!then….Bon appetite! bar food without the bar price..save you some money!
